Prosperous Pot Shanghainese Style | 上海一品鍋
Ingredients | 材料
Egg | 雞蛋
Bean curd wrap | 百葉皮
Minced pork | 碎豬肉
Beef balls | 牛肉丸
Pork balls | 豬肉丸
Black mushrooms | 冬菇
Dried scallops | 瑤柱
Glass noodles | 粉絲
White cabbage | 大白菜
Kam-Wah ham | 金華火腿
Chicken stock | 清雞湯
Seasoning | 調味料
Salt & pepper | 鹽 & 胡椒粉
Shao Hsing wine | 紹興酒
The Steps | 步驟
Use minced pork as filling. Season with salt, pepper & Shao Hsing wine.
用少許鹽,胡椒粉及紹興酒腌豬肉碎做餡料 。
Place a teaspoon of minced pork on the bean curd wrap, roll & fold into long-shaped dumplings. Put aside.
用百葉皮將豬肉碎包成條狀(百葉包),備用 。
Pan-fry egg in oil till golden brown.
在雞蛋加入少許油,然後用小火把雞蛋煎至金黃色 。
Place a teaspoon of filling into the centre of the egg wrap. Fold the egg wrap into half to make egg dumplings. Put aside.
再把豬肉釀進雞蛋皮,對褶成蛋角,備用 。
Slice the white cabbage. Place at the bottom of the pot.
將大白菜切片,然後鋪在鍋底 。
Neatly arrange the glass noodles, black mushrooms, bean curd dumplings, egg dumplings, beef balls, pork balls, dried scallops and Kam-Wah ham in the pot.
再將所有材料如粉絲,冬菇,百葉包,蛋角,牛肉丸,豬肉丸,瑤柱及金華火腿順序地擺放在鍋裏 。
Finally, add chicken stock as the soup base and boil till all ingredients are cooked.
最後加入清雞湯將所有材料煮至熟透 。

Fried Nian Gao Shanghainese Style | 上海炒年糕
Ingredients | 材料
Nian Gao | 年糕
Pork | 豬肉
Black mushrooms | 冬菇
Bamboo shoots | 冬筍
White cabbage | 大白菜
Black soy sauce | 老抽
Light soy sauce | 生抽
Corn oil | 玉米油
Seasoning | 調味料
Salt & pepper | 鹽 & 胡椒粉
Shao Hsing wine | 紹興酒
The Steps | 步驟
Slice pork, black mushrooms, bamboo shoots & white cabbage.
將豬肉,冬菇,冬筍,大白菜切絲 。
Season pork with salt, pepper & Shao Hsing wine.
用少許鹽,胡椒粉及紹興酒腌豬肉 。
Heat the sauce pan with oil.
燒紅鍋,油稍微多一點 。
Stir-fry the pork, bamboo shoots, black mushrooms, white cabbage and nian gao.
將豬肉,冬筍,冬菇,大白菜及年糕一併炒 。
Add water, light soy sauce and black soy sauce. Continue frying for few minutes till soft and dry.
加水,生抽及老抽繼續炒,直至材料柔軟及干身 。

Gizzard & Tongue in Chinese Wine | 醉鴨飩,醉豬俐
Ingredients | 材料
Duck gizzard | 鴨肫
Pig tongue | 豬俐
Seasoning | 調味料
Salt & pepper | 鹽 & 胡椒粉
Shao Hsing wine | 紹興酒
Sesame oil | 芝麻油
The Steps | 步驟
Clean & slice duck gizzard & pig tongue.
將鴨肫, 豬俐洗乾淨,然後切片 。
Marinate with salt, pepper & Shao Hsing Wine.
用鹽、胡椒粉、紹興酒腌材料約兩天至入味 。
Pour sesame oil on top. Serve cold.
淋上少許麻油,冷吃 。
