Chicken Shredded Mung Bean | 雞絲涼拌粉皮

Ingredients | 材料
Mung Bean Sheet | 水晶粉皮
Chicken | 雞肉
Sesame Dressing | 芝麻醬
Parsley | 芫茜
Chicken Powder | 雞粉
Cornflour | 玉米粉
Shao Hsing wine | 紹興酒

Seasoning | 調味料
Salt & pepper | 鹽 & 胡椒粉
Sesame oil | 芝麻油

The Steps | 步驟
Cut mung bean sheet into cubes. Chop parsley.
將水晶粉皮切粒,切碎芫茜 。

Bring water to boil. Turn off fire & pour in mung bean sheet. Spread mung bean sheet till half-translucent. Rinse with ice water. Put aside.
煲滾水,熄火,倒進水晶粉皮攪至半透明狀況,過冰水,備用 。

Shred chicken. Marinate with chicken powder, cornflour & Shao Hsing wine. Stir-fry.
將雞肉切絲,用雞粉、玉米粉及紹興酒調味,然後略為炒香 。

Season mung bean sheet with salt, pepper & sesame oil. Mix chicken & parsley with mung bean sheet.
用鹽、胡椒粉及麻油把水晶粉皮調味,加入雞絲及芫茜攪勻 。

Add more sesame oil & peanut sauce.
最後再加多點麻油及花生醬 。

Dumplings in Soup | 麵疙瘩

Ingredients | 材料
Shanghai salted cabbage | 上海鹹菜
Pork | 豬肉
Flour | 麵粉
Egg | 雞蛋
Bamboo shoot | 竹筍
Corn oil | 玉米油
Black mushroom | 冬菇

Seasoning | 調味料
Salt & pepper | 鹽 & 胡椒粉
Sesame oil | 芝麻油

The Steps | 步驟
Shred Shanghai salted cabbage, pork & mushroom.
將上海鹹菜,豬肉及冬菇切絲 。

Marinate pork with sesame oil, salt & pepper. Put aside.
用芝麻油,鹽及胡椒粉腌豬肉,備用 。

Add eggs, water & salt into the flour. Stir till paste-form. Put aside.
將麵粉加水及少許鹽攪至糊狀,備用 。

Stir-fry shredded shanghai salted cabbage, pork and mushroom in wok. Add water as soup base.
炒香上海鹹菜,豬肉及冬菇絲,然後加水作湯底 。

Use tablespoon to scoop flour paste into wok till it forms a small dough. Boil till cooked.
用湯匙把麵粉糊加進鑊中的熱湯,麵粉糊遇熱形成小粉團,煮至熟透 。

Sweet Dumplings Shanghainese Style | 甜酒讓園子

Ingredients | 材料
Sesame dumplings | 芝麻丸子
Fermented glutinous rice | 酒釀
Osmanthus | 桂花
Rock sugar | 冰糖
Mixed fruit | 雜果
Cornflour | 玉米粉

The Steps | 步驟
Cook sesame dumplings in boiled water.
將芝麻丸子放入熱水裏煮 。

Add fermented glutinous rice, osmanthus, rock sugar and mixed fruit.
加入酒釀,桂花,冰糖, 雜果 。

Thicken the ingredients with cornflour.
最後用少許玉米粉埋芡 。
