Braised Beef | 紅燒牛肉

Ingredients | 材料
Beef shin | 牛輾
Spices | 花椒 & 八角
Cinnamon | 肉桂
Bay leaf | 香葉
Red chili | 紅辣椒
Spring onion |
Shallots | 蔥頭
Ginger |

Seasoning | 調味料
Salt & pepper | 鹽 & 胡椒粉
Light soy sauce | 生抽
Dark soy sauce | 老抽
Shao Hsing wine | 紹興酒
Rock sugar | 冰糖

The Steps | 步驟
Cut beef shin into cubes. Briefly cook in boiling water to remove impurities.
把牛輾切粒,飛水,清洗 。

Use the spring onion to tie a knot. Tap ginger briefly. Remove seeds from red chili.
把蔥打結,薑輕拍 ,紅辣椒去籽 。

Transfer beef cubes to a claypot. Add about half of the thickness of the beef of water.
放牛輾於砂鍋中,加入牛輾一半厚度的水份 。

Add spices, cinnamon, bay leaf, red chillies, spring onion, shallots, ginger to the beef.
加進花椒,八角,肉桂, 香葉,紅辣椒,蔥,蔥頭,薑 。

Season with salt & pepper, light & dark soy sauce, rock sugar.
用鹽、胡椒粉、 生抽、紹興酒、冰糖調味 。

Simmer for about an hour.
蓋好燜大約一小時 。

Chicken Saute with Celery | 西芹炒雞柳

Ingredients | 材料
Chicken fillet | 雞柳
Celery | 西芹
Red capsicum | 燈籠椒
Yellow capsicum
Green capsicum
Sesame seeds | 芝麻

Seasoning | 調味料
Salt & pepper | 鹽 & 胡椒粉
Light soy sauce | 生抽
Shao Hsing wine | 紹興酒
Sesame oil | 麻油
Chicken powder | 雞粉
Chicken stock | 雞湯
Corn flour | 玉米粉

The Steps | 步驟
Cut chicken fillet into smaller pieces.
把雞柳切條 。

Marinate chicken fillet with salt, pepper, light soy sauce, Shao Hsing wine, chicken powder & corn flour for about 15 mins.
用鹽、胡椒粉、生抽,紹興酒,雞粉及玉米粉腌雞柳約十五分鐘 。

Shred celery, red, yellow, green capsicums.
把西芹、燈籠椒切條 。

Fry chicken fillet till half-cooked. Put aside.
雞柳飛油至半熟,備用 。

Stir-fry celery till soft. Add in capsicum and continue frying.
先炒軟西芹,後加入燈籠椒再炒 。

Add in chicken fillet.
加入雞柳 。

Pour more Shao Hsing wine & chicken stock.
用紹興酒及雞湯調味 。

Thicken the sauce with corn flour.
用玉米粉埋茨 。

Add sesame oil and garnish the dish with sesame seeds.
最後淋上麻油及洒上芝麻 。

Shanghainese Cabbage Rice | 上海菜飯

Ingredients | 材料
Cabbage |
Rice |

Seasoning | 調味料
Salt |
Chicken powder | 雞粉
Oil |

The Steps | 步驟
Cut cabbage into cubes. Briefly pan-fry. Season with salt.
把白菜切粒,用油炒軟,加鹽調味 。

Rinse rice. Mix rice & cabbage thoroughly in a rice-cooker.
米洗淨放進電飯煲,加入白菜攪勻 。

Add more oil. Season the ingredients with salt & chicken powder.
再淋上油,用鹽、雞粉調味 。

Add water to cook the ingredients.
加水把米飯煮熟 。
